Department Of Nutrition

Welcome to the Department of Nutrition at the University of the Incarnate Word. Housed in the School of Mathematics, Science and Engineering, Nutrition offers dynamic programs at the undergraduate and graduate levels, preparing students for careers in food and nutrition that promote wellness and improve quality of life.

The UIW Nutrition Department strives to provide responsive, individualized attention to develop students in a multicultural, socially cohesive environment to create a better future through food and nutrition.

The Mission of the University of the Incarnate Word Nutrition Department is to prepare professionals committed to providing nutrition and dietetic services to improve the health and well-being of individuals and groups. The programs within emphasize the importance of scientific and evidence-based practice, ethical decision-making and understanding of social justice issues, including the regional and global ecological dimensions of food and nutrition.

The Department’s Education Philosophy recognizes that UIW is composed of individuals of diverse backgrounds engaged in thoughtful interchanges of ideas in the search for truth. This environment is conducive to developing eventual professional dietitians whose practice is ethical and based on evidence. Each member of the UIW community has inherent dignity and worth and

possesses strengths. The UIW Nutrition faculty encourage students to develop these strengths as they progress through the program. Students connect learning across the curriculum integrating knowledge from a variety of disciplines to enhance understanding and solve problems. The ecological approach emphasizes interrelationships concerning food and nutrition at the cellular, individual, social, and global levels.

Graduates go on to rewarding careers in healthcare, food service management, food industry, community nutrition programs and governmental agencies, private practice, wellness, sales, research, and media communications.

The Dietetic Internship Program will not be accepting new students for the 2025-2026 academic year. Please check back for information regarding the 2026-2027 academic year.
 

Accreditation Council for Education in Nutrition and Dietetics (ACEND) 

In the Department of Nutrition at the University of the Incarnate Word, the Didactic Program in Dietetics (DPD) is granted full accreditation by ACEND. ACEND is the accrediting agency for education programs preparing students for careers as registered dietitian nutritionists (RDNs).
